Mint Yogurt Sauce

Mint Yogurt Sauce


Ingredients:

2- bunches of washed cilantro- leave majority of the stems 
4- bunches of washed peppermint leaves.
2- jalapenos ( if you are not a fan of spicy use one) 
Juice of 4-5 Limes
Sea Salt to taste

 In a Blender ADD: Cilantro, Mint leaves, jalapenos, lime juice, and salt and blend. It will take time because the ingredients are all dry- you can help with blending by adding a bit of water ( just 4-6 tablespoons) to get it to go. I usually have to turn off the blender, TAKE it OFF the base and push down on the leaves. COVER it up and put it back on the blender and pulse it to get it to go. 

Once you see its all blended and give it a taste, add salt, another jalapeno, lime juice if needed for your taste.
 
Once its finished- I pour the sauce into a ice cube tray and freeze it. Take as I need. You can also mix this sauce ( like 3 cubes) and add it into a 2 cups of greek yogurt. Its delicious with Rice, Chicken, Samosas, anything you want it with.


Here is mine, mixed with yogurt. I also add chopped cucumber, tomaotes and fine chopped onion into it- TRY IT its addicting.

Made with Love: Naan

Naan is one of the basic essentials of accompanying the main dish such as, Chicken Tikka Masala, Khahri Ghust,  and Curry. No one would ever pass off a fresh homemade, made with Love fluffy naan. If you like the smell of fresh baked bread then you will love the smell of these babies when they are baking in your oven.

Ingredients:
1 pkg yeast
2 teas sugar
1 1/2 warm water
2 Tbs Coconut oil or Olive oil
1/3 cup greek yogurt
3 cups of flour
2 tes sea salt
oven safe metal tray- if it caves inward then you can flip the tray and use if backwards.
Rolling pin

Naan garnishes
Finely Chopped Cilantro
Melted Butter
Minced garlic
Chopped green onion

1- IN a large bowl; add warm water, add yeast and sugar. Whisk and let if set for 10 mins.
2- COMBINE into your yeast mixture sifted flour, salt, yogurt and oil. Kneed it well- its ok if its sticky. try your best to scrap off most of the dough from your fingers. place the dough in a oil coated large bowl and set the dough in. COVER it with plastic wrap and watch it grow. ( wait 2-3 hours)

3. PRE-HEAT OVEN at 475 degrees. Take out the dough and divide it- make equal size balls. Cover them up with plastic and wait additional 20 mins.
4.  Roll out the dough balls with a rolling pin to the point they are nicely flat. Lightly coat the side that will touch the tray with oil and place the flattened dough on the tray. Place it in the oven and wait 3 mins. Flip the Naan and wait 6-7 mins. ****Be sure to not walk away because you dont want it to over cook or burn. Once they are nice and fluffy. Brush with some butter or coconut oil. Repeat for each dough ball, because they all will not fit in one tray. Once finished you can add on your choice either- minced garlic, green onion, or cilantro on the cooked naan and place it back in the oven for additional 1-2 mins.

Chicken Tikka Masala

Chicken Tikka Masala has got to be one of the most favorite craved Indian/Pakistani Dish of all time. The flavors of this dish is on the lips of many and honestly arouses the taste buds just thinking about it....you know you do, if you have experienced this reaction.

Ok, let get started, here is what you will need:

 First Half of Ingredients
 1 cup- Greek yogurt
1T- Lemon juice
2teas- Ground Cumin
1teas-Cinnamon
2teas-Red pepper (powered)
2teas-Black pepper
1T- Fresh minced Garlic
4teas-Sea Salt (I do NOT use ionized salt  otherwise known as table salt)
3-boneless chicken breast  ( cut into bite size pieces)
Skewers (for wooden-be sure to soak them)

 Second Half of Ingredients
1T Butter
1 fresh minced clove of garlic
1 medium size onion chopped into small pieces.
1 jalapeno chopped fine ( you can take out the white flesh and seeds to make it not spicy)
2teas paprika
3teas salt
1 oz tomato sauce
1 cup heavy cream
1/4 cup cilantro

1. COMBINE in a large bowl; yogurt, lemon juice, cumin, cinnamon, red and black pepper, ginger, 4 teaspoon sea salt. STIR in chicken and refrigerate for 1 hour.

PREHEAT grill to high heat.
Lightly oil the grill, THREAD chicken marinated chicken pieces onto skewers. GRILL until the juices run clear, about 5-6 mins on each side. (all grills are different, just make sure they don't dry out)
IN a SKILLET melt butter on medium heat ADD; onion and let it sweat and caramelized (break down- you can add water if it get too dry, but just a little to make it moist to be broken down). Once you see that the onion has reached a meshy constancy, add garlic and jalapeno- saute for 1-2 mins. ADD 2 teas cumin, paprika, add tomato sauce and cream. SIMMER on low heat until the sauce thickens- give it about 20 mins. ADD your chicken and simmer additional 10 mins.
Garnish with cilantro and ENJOY!!!!

Serve it up with a plate of Basmati Rice or Naan.

I bought the Shampoo/body wash, lotion and a hair mist. The shampoo is really lathery, and has a settle orange scent. Lotion is scent free wish it had some scent, and the hair mist really conditions hair. I only used it on my son- gave him a nice smoothness to his hair.

Pomegranate Salad

Trying different ways to eat healthy. This salad has a perfect balance between crisp, sweet, and creamy.

What you'll need; serves one
1/4 cup ruby red pomagrante seeds
1/4 cup thin sliced English cucumber 
Half tomato cut into wedges 
3 Long green beans - cut in into bite size
Wishbone balsamic vinaigrette dressing (to taste)
Crumbled feta cheese
Spring greens 1 1/2 cup 

Put your greens in first, followed by beans, tomato, cucumber and pomagrante seeds, add dressing (to your   Taste) and mix. Sprinkle on feta cheese... And eat up. So delicious!

Magic Bars

Last week I made these yummy bars for dessert. They are delicious....

This is a simple, easy and tasteful treat for your guests to munch on after Thanksgiving dinner. It's loaded with coconut, and almonds. 

You will need:
2- cups of crushed graham crackers 
14oz can of sweetened condensed milk (I got the low fat)
8 TBS unsalted butter
3/4 cup pumpkin purée
1 TES cinnamon 
1/4 TES nutmeg 
1/4 TES cloves ( I didn't add any, totally optional)
1 big size Apple shredded OR 2 medium size  (Apple type- I used whatever on hand)
1 1/2 cup sweetened shredded coconut
1 cup toasted chopped almond
1 cup chocolate chips 
9x13 pan
Foil to align pan

First - preheat oven 350 degrees

Second -melt butter and add to graham crackers- give a good mix and spread evenly on the bottom of pan.

Third- in a bowl, add condensed milk, pumpkin purée, cinnamon, nutmeg and cloves until combined and pour over the graham cracker crust. 

Fourth- take your apple and grate it on your cheese grater- spread in evenly on your purée mixture and kinda pat down, TOP it off with you chocolate chips, almonds and coconut and pate down carefully.

Put it in the oven for 35-45 mins. Let it cool- you can even refrigerate it before cutting. And ENJOY!!! Hands down they are good!!!

Getting Inspired

 Just like our DNA we all have a specific sense of style and fashion trend we abide by. Some of us use our STYLE in expressing our self . Honestly its hard especially if we never cares for it before....Such as myself. I never really cared for dressing in style, but I loved art, fashion just never expressed it on myself. I was that girl who ALWAYS wore something black and was the "simple Jane." 
.......I needed to be inspired. Honestly we get inspired. No one is born with a sense of style. We are individuals who mold to a "style" we click to. Plus and the most important of all is that we don't want to burn a hole in our pocket on our way to styling. FYI- I never buy anything on regular price.

  1. Places that I found can be Economical 
  •  GAP and GAP Outlet- I have a Gap Card, and will only use it to get more % off. When they have sales, that is the best time to hit those Sales Racks. About 85% of all my sons clothes are GAP and I paid less than what Target sells. Another reason GAP is great is that they're clothes are very durable....If you have kids you know what I mean..they get washed 5 times a week. My sons clothes still look and feel great. (Usually shop for my son only at GAP)
  • H&M, Forever 21- blouses, pants. Forever 21
  • Go Jane- Shoes such as long boots- check out there site usually because they can get wiped out pretty fast. Go Jane
  • Old Navy- I am a Tall girl and I need my length. Old Navy has a good selection of Tall ( so does GAP) They always have sales going on. If you cant find it in the store- they have it online and inexpensive. OLD NAVY
  • Nordstroms Rack- can be expensive, but you gotta search. I bought a very cute Michael Kors white blouse regular price was $89.50 and I got it for $30.00.
  • CottonOn- They have the BEST jeans EVER and you can get them on sale as low as $10.00. Cotton On
  • Target- always trendy, and on sale - paying with the Target Debit Card is worth it especially if you like shopping there. Plus you can get so many coupons and they are very beneficial
  • Ross/ Marshalls/Burlington- They have a awesome selection of clothes and trends that complement various styles- but I can hardly find stuff there for myself because I'm on the Taller spectrum...just a matter of finding it.

DesignerChef101's Simple Veggie Snacking

Salad topped Toasted Garlic Bread!
I made spaghetti one night and as always never have spaghetti without garlic bread.....I bought two.
I LOVE to broil it in the oven just a couple of minutes before serving... You know that nice golden warm brown along the edges... Absolutely yumminess- how can anyone pass on garlic bread like that?
So since I had 1 loaf I decided to mix something up and what I created was dangerously good.

Here is what you'll need: serving size 1 
-5 thin slices of English Cucumber (I like English because I prefer the peel and the other ones have a thick peel- hard to eat through sometimes)
-1 organic small heirloom tomato (about 3 Slices)
- a hand full of baby spring mix
- a wedge of garlic bread (4 inch)
 Start by broiling your bread until golden toasty brown - takes like a min or 2
After it's out top it with your tomatoes ( you can hear the sizzle)
Add cucumber and top with spring mix
Set in plate and enjoy!!! I am soo addicted to this and I think you will be too especially if you love garlic bread. When you bite in you can taste the crisp bread, toasty garlic flavor and that tomatoes releases it's juices while it sizzles on the hot bread- a balance of acidity with the mild cucumber and the freshness of greens. Garlic Sauce yummy

Hi guys sorry I have been MIA. Today I want to share a yummy Garlic Sauce that accompanies anything you want to give a splash of flavor. Here is what you'll need:

1 or 2 Garlic heads
1 TBS  sea salt
1/2 cup lemon juice
2 TBS herbs- such as; chopped chives, rosemary etc.. what you prefer it is optional.
1/2 cup of vegetable oil
1/2 cup of olive oil 

Start by Chopping the peeled garlic and put it into a food processor, add salt, lemon juice and oils. Process the ingredients.Store in a seal tight jar and keep it in the refrigerator. Mine is gone in 3 weeks and thats about how long its good. 3-4 weeks (if it lats that long) ENJOY!!!
SIDE NOTE- GREAT on sandwiches, pitas, with chicken, beef, pork.

Greek Salad

Hey there,  I hope all is well. Today I wanted to share my all time husbands favorite
 Greek Salad. We usually have this on the side of rice or what your using as your main dish. Its delicious and easy to make. Frankly I eat it as is.
(A side note not related to this; I gotta say I'm watch Home Alone 2 with my son right now on ABC Family and no matter how many times I watch it....ITS hilarious!!!.....Takes me back to when I was a 10 year old. lol)


You will need:
1 cucumber thinly sliced
1 pack cherry tomatoes slit
1/2 small red onion-cut in rings
1/2 Tablespoon olive oil
2 Tablespoons of freshly squeezed lemon juice
1/4 teaspoon salt
1/4 black pepper slit
1 cup black olives
2 teaspoons fresh orgeno
1 1/2 sup small cubed feta cheese

COMBINE: In a bowl whisk together olive oil, lemon juice, salt & black pepper.
ADD cucumbers, tomatoes, onions and olives. Give it a nice toss- nicely coated and evenly in-corporated. Dish it in your serving bowl and top it off with Feta cheese and oregano.

Healthy Snacking

Chicken Stuffed Avocado

I love a healthy snack and finding the right choices can be tricky. Read up on specific foods and just experiment. I have whipped up a yummy easy snack and its very filling plus delicious!
Ingredients
1 cooked rotisserie chicken
1 ripe avocado slit
1 stem of celery fine chop
salt/black pepper to taste
1 green chilli ( take out all the white and the seeds, you just want to flavor not the heat)
1/4 cup dried canberries or 1/4 cup shredded carrot
1/2 to 1 cup greek yogurt
2 Tablespoons of chopped chives

IN a bowl tear up all the meat from the bones of the chicken, so that its nicely shredded. ADD cranberries, celery, green chilli, salt/pepper and yogurt. MIX it all together combining all the ingredients. 
TAKE your ripe avocado and slit in down the middle set on the plate (sprinkle some salt and black pepper on it) and spoon in the chicken salad and top it off with some chives and ENJOY!! 
 
With all the extra I make a sandwich or two for lunch. Usually its all gone because I use 2-3 Avocados and we all have that for a snack. I hope you enjoy!

Chicken Mali Boti

Welcome to my blog! Many people have asked me to cook specific dishes for them. So..I thought why not...right? I would love to share my recipes and some of my fashion ideas with anyone who is interested in getting tips. Today I sharing a all time family fav.

Chicken Mali Boti

Ingredients 
2lbs chicken breast chopped in bite size cubes
1 med onion cut in rings
2 tomatoes chopped
1 1/12 garlic and ginger paste
1-2 lemon
salt to taste
1 Tablespoon green chillie
( you can remove the seeds to take the heat and but keep the flavor in)
1 cup Greek yogurt
1/4 cup heavy cream
1 piece of coal
1 teaspoon olive oil
dash of red pepper

Marinate 1/2 Kg Boneless chicken breast with 1 1/2 Tablespoon ginger and garlic paste for 1 hour.

In a Separate Bowl:
 MIX- Greek Yogart and cream.
ADD- salt to taste, green chilli paste a dash of red pepper (or according to taste, you can always add alittle and then taste it to make sure its ok for your taste) After this add in your chicken. Refrigerate for 30 mins.
HEAT- A small piece of coal ( what you use for a BBQ) til almost red. In a pan (that the chicken will be cooked in) add onion rings, tomatoes and set the coal in. DROP a few drops of olive oil on the coal and smoke will start releasing. Cover it and let the cooking begin.  
Once its Finished serve it with rice and a nice greek salad. Yum Yum Delicious

Note- I prefer you put the pot outside, as smoke will enter the house.
